Overnight 'Faux'tmeal

Introducing...'Faux'tmeal! Our hemp seed heart take on traditional oatmeal with fresh berries and nuts added in for a sweet finish! See if this breakfast staple gets a 5 star rating with our keto twist! or this recipe, we used some organic berries, but certainly use whatever fits your particular budget! We tried to keep the cost down as much as possible to aim for affordability. (One way to achieve this is to perhaps go with only one berry type instead of raspberries, blueberries AND blackberries.) The following ingredients are DOUBLED (except the egg white) as we used half of everything for two separate bowls. (as seen in the terrific photo I took!)

  • 18 Tbsp. hemp seed hearts
  • 2/3 cup culinary coconut milk
  • 1 egg white
  • 1/2 cup walnuts (or preferred nuts)
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup plain yogurt (we used Chobani)
  • 1/2 heavy whipping cream
  • 1/2 all berry types (again, we used black, blue, and raspberries)
  • Preferred spices (we used cinnamon, nutmeg, all spice, cloves, and stevia)

  1. Preheat oven to 275 degrees F.
  2. Begin by cracking an egg and only allowing the white to run into a bowl.
  3. Add some Stevia to it (or whichever sweetener you prefer) and whisk until frothy.
  4. Go ahead and add the remaining spices you'd like to use, and whisk until fully blended this time.
  5. Add your walnuts into the bowl and work them until thoroughly covered with mixture.
  6. Pour mixture covered walnuts into a greased baking pan and let bake for 25 minutes. (Be sure to check every 5 minutes or so and eventually stir nuts so they wont stick to the pan.)
  7. Once that time is up, take them out and let cool for about 5 or so minutes.
  8. Now, begin spooning out your hemp hearts into another bowl. (half the above ingredients into two separate bowls like we did, or in one bowl with the above quantities if you prefer.)
  9. After this, add your coconut milk, yogurt and whipping cream to the hemp hearts and mix until it resembles oatmeal. (Be sure to add more sweetener and spices to taste!)
  10. Once that's complete, top it off with the coconut flakes, berries of your choice, and nuts.
  11. Cover bowl(s) with plastic wrap and place in fridge overnight for a sweet breakfast or a healthy dessert!
Cuisine: Breakfast/Dessert | Recipe Type: Low Carb

The hemp hearts will absorb a good deal of the liquid overnight, leaving you with a thicker consistency and more "authentic" looking and tasting oatmeal substitute! We hope you enjoy and do let us know what you think in the comments below and don't forget to rate this recipe! Do you see yourself replacing regular oatmeal for this healthier option?
